Pumpkin Muffins

This is a great time of year to get out and support your local pumpkin patch and have some fun.

This recipe comes from a family friend. Choose ingredients that are produced naturally or organically for maximum nutrition.

Combine in a small bowl:
1 c pumpkin, cooked
3/4 c oil
1 c sugar
2 eggs, beaten
Mix well.

In another bowl combine:
1 1/2 c pre-sifted flour
1 t baking powder
1 dash salt
1 t baking soda
1 t cinnamon
1/2 c raisins
1/4 nuts

Combine all ingredients, place in muffin tins.
Bake at 350 degrees 20 minutes.
